Back in the early 60's, it was my privilege to work as a waitress under Mary's expert guidance at Elm Rest in Oak Hill. To this very day I often include items for family meals from the weekly menus she prepared. Coincidentally, on the very day she passed away, I had made the jam-filled layer cake dusted with confectioners sugar, which was always served after Sunday's midday meal at Elm Rest. As always happens, she and those long ago boardinghouse days were in my thoughts as I prepared it. I also remember with awe her ability to retain all of the breakfast "egg orders" from the dining room and deliver them accurately to every waitress! Her soft- spoken, gentle and unruffled manner prevailed throughout each hectic summer season as she taught us "the ropes" quietly and efficiently. I will always remember her fondly and with gratitude.
